Smashed potatoes with chives and creamy dip

2 lbs. baby gold potatoes
¼ cup olive oil, divided
Kosher salt, as needed
2 tbsp. chives
½ cup Califia’s Oat Barista Blend 
⅓ cup hemp seeds
2 tbsp nutritional yeast
1 tsp. Kosher salt
1 garlic clove, peeled
½ lemon, juiced
1 lemon, zested

 1) Add Oat Barista Blend, hemp seeds, nutritional yeast, salt, garlic, lemon juice and zest to the base of a blender and blend into a creamy sauce
2) Heat oven to 200C
3) Boil potatoes in a large pot of boiling water until fully cooked
Drain and set aside
4) Drizzle a 9x13 sheet pan with 2 tablespoons of olive oil and then smash each potato and place on a sheet pan
Season with salt and remaining 2 tablespoons of olive oil, until golden and crispy turning half way through, about 40 minutes
5) Remove from oven and serve with dip
